INGREDIENTS (4-6 SERVINGS)
400 g chicken breast (preferably organic)
3 cloves of garlic
Ginger to taste (half to one-third the amount of garlic)
1 tsp salt
1 tsp garam masala
2 tbsp tomato paste
3 tbsp canola or sunflower oil
1 lemon
½ tsp chili powder (optional or adjust to taste)
1 tsp sweet paprika
~150 g plain yogurt
Wash the chicken breasts and cut them into pieces. Chop the ginger and garlic into small cubes, then crush them into a paste using a mortar and pestle. Marinate the chicken in this paste for at least 30 minutes.
Meanwhile, mix the yogurt with tomato paste, garam masala, oil, lemon juice, chili, paprika, and salt. Combine with the chicken and ideally grill on a rack at 220°C for about 10 minutes. Alternatively, bake in a tray lined with parchment paper.
